What to bake for a lover of all things salty and caramelly? How about salted caramel cupcakes with a caramel core and salted caramel icing? Yep. That’ll do nicely.
Normally a monthly roundup, but I’ve been rather busy. So instead, here’s a quick zoom through February, April and May. There was a trip to A&E for me and my knee early in February which left me housebound for a few weeks. After that the trips got much more fun – Manchester for a shoot, Bristol for a weekend and Cornwall for a week. As usual, there was plenty of cake and flowers.
Every year as soon as autumn arrives, all I want to do is curl up in woolly jumpers and eat apples and cinnamon and baked goods. This cake is the perfect mixture of all those things (minus the wool), and it’s become tradition to bake one every autumn. The bumper harvest on the apple tree this year means this will probably be the first of many.
